Increased Yield of Hydrolysates from Shellfish
A New Enzymatic Hydrolysis Technique

Introduction

Hydrolysates have many uses in the following areas:

Specialty foods such as non-allergenic infant formulas, dietary foods and supplements, and muscle enhancing supplements

Dermotological products including facial cleansers and cremes, and skin moisturizers and rejuvenation lotions.

However, the yield of hydrolysate from its original form is very low for a marketable technology.

Our Technology

We have developed a method for extracting a very high yield of hydrolysates from shellfish. This invention offers a method of biocatalytic hydrolysis for shellfish. The complex enzyme system used in this invention, produced a yield of hydrolysate reaching up to 90%.

This invention uses a complex enzyme system under mild condition to hydrolyze the shellfish, and obtain a high yield of the hydrolysate. The resulting hydrolysis products retain and concentrate on bioactivecomposition of the shellfish. They contain amino acids, peptides, nucleotides, ribonucleic acids, unsaturated fatty acids and trace elements.

Advantages of this Technology

Our hydrolysate is advantageous in the prevention of heart disease and thrombosis, and in infant growth.
